Vincent was born in Longford, Ireland on October 19, 1967, to Michael and Mary Teresa (Higgins) McCabe. Vincent resided in Rossan, Aughavas Co. Leitrim until immigrating to the United States. He was a very talented man who had great pride in the work he did for others. Vincent was a proud supporter of the New Haven Gaelic Football Youth Sports in which he was a beloved coach and for which his late son and survived daughter used to play. Vincent was very proud of his home gardens, animals and culinary and grilling talent. He would always send others text message images of his culinary creations and the homegrown flowers from his yard. He was particularly fond of his potatoes and sunflowers which he marveled at their beauty quite often. He had an appreciation for nature, especially that of the dogwood tree, and all the beauty it provided.
