Minnie Elizabeth “Liz” Jones Knight, of Savannah, went home to be with her Lord on January 2, 2012. She was born April 18, 1924 in Poulan, GA in Worth County, and moved to Savannah in 1951. She will be remembered by many friends for her delicious fried chicken as the owner of Liz’s Chicken on Abercorn Ext. She was a member of Savannah Christian Church. She was preceded in death by her husband John Knight Sr., and two sons Joseph David Wood (1944) and Jeffery Alan Knight (1997). She is survived by her son, John Knight Jr. (Cindy) of Bloomingdale, GA; seven daughters, Sybil Collins (Kim) of Albany, GA, Dorothy “Dottie” Hunter and Liz “Cookie” Knight, both of Savannah, Lucretia Smith of Pembroke, GA, Shirley Blitch (Sammy) of Ellabell, GA, Della Johnson (Bo) of Columbia, SC, and Jackie Clark-Wooten (Lou) of Bloomingdale, GA, 21 grandchildren, 28 great grandchildren, 7 great great grandchildren, sister Sara Smith of Jacksonville, Fl, and several nieces and nephews. Visitation will be held from 6-8pm on Wednesday, January 4, at Fairhaven Funeral Home, Hubert C. Baker Chapel. Funeral Service will be held at 9am on Thursday at the Chapel of Fairhaven Funeral Home, Hubert C. Baker Chapel with Rev. Mark Ingmire officiating. Pall Bearers will be Chris “Bubba” Collins, Chris Knight, Justin Knight, Pat Welsh Jr., Jesse Johnson, Slade Johnson, Robbie Clark, and Travis Wooten. Honorary Pallbearers will be Kim Collins, Sammy Blitch, John “Bo” Johnson, and Lou Wooten. Burial will be held at 3pm on Thursday in Poulan Cemetery in Worth County, GA.
