She was married to her long time love, Francisco Xavier Kim Anh Le.
Mai immigrated to the United States with her husband and children in 1975. She worked in a flower shop before they eventually opened “Saigon Restaurant”, one of the first Vietnamese restaurant in San Diego.
The restaurant was successful and showcased Mai’s Vietnamese-French fusion cuisine, which was highly rated by San Diego local newspapers.
Along with her love for her family, Mai was a carefree and fashionable lady, full of humor and strength who valued the relationships she built with her community.
Mai was preceded in death by her husband in 1983. Her most endearing trait was her unwavering love for her husband. She remained the pillar of strength for her family, devoting her life to raising her young children and grandchildren
and providing happiness and stability in their lives.
Elizabeth Mai Phuong Le is survived by her seven children and eleven grandchildren. May the journey home to God and the waiting arms of her loving husband bring Mai peace and joy.
Mai was a devout Catholic and in honor of Elizabeth Mai Phuong Le, a charity fund in support of the seminarians and orphanages in Vietnam is directed to the non-profit organization, La Vang Association Inc-Hoi Tu Thien Vietnam, PO Box 38, Garden Grove, CA 92842.
