Carole graduated from John Burton High School and then made it a priority to continue her life as a homemaker. Her top focus in life was to take care of those surrounding her and making sure her family and friends were taken care of. She loved spending time with her family and enjoying the views of life around her. Some of the family time she was most proud of were holidays (especially Christmas) and gatherings that included all of those she loved. She took the time to enjoy the small things such as picking out flowers to be planted and watching them grow in her backyard or in her younger years enjoyed going out dancing and watching the water at the beach.
Carole was known for her loving and caring spirit as well as her beautiful blue eyes and smile that would light up any room she walked into. She loved to watch everyone around her laugh, smile, and enjoy life.
She is lovingly remembered by children: Sherri Elliott married to Allen Elliot of Raleigh NC and Scott Jackson married to Tonia Jackson of Youngsville NC; her grandchildren: Loran Ashli Elliott, John Clayton Elliott, David Allen Elliott, Haley Siera Jackson, Brittany Hicks Newell and her great grandchildren: Nathaniel Elliott, Dalton Elliott, Carley Elliott, Caden Elliott, and Olivia Newell. She is also survived by her sisters and their families: Jeanne Alwes and husband Richard, of Garner and Debra Lynn Kimball and husband Ralph, of New London.
Carole was preceded in death by her parents: Clayton Edward Cowden and Edna Thomas Cowden and her siblings: Norma Sowder, Barbara Muslin and Edward “Ed Cowden; and recently by her husband of 58 years: Hugh Donald “Don” Jackson in October of 2020.
Services for the family will be held on Thursday, March 11, 2021 at Mitchell Funeral Home. Due to present health precautions, the service will be live streamed so all can attend virtually beginning at 1 pm.
