Maureen loved potlucks and 2 of my favorite things she would  bring were her Hungarian Mushroom Soup and this cake. I brought this to her Celebration of Life Potluck. It was a wonderful day filled with food, family and friends...just how she would have liked it. I was asked to put the recipe on here and I hope you enjoy making it as much as I did.

Crazy Banana Cake with Cream Cheese Icing

Ingredients for the Cake:
1.5 cups very ripe bananas (3 fresh bananas or 4 thawed, previously frozen bananas)
2 tsp lemon juice
3 cups all-purpose flour
1.5 tsp baking soda
1/4 tsp salt
3/4 cup soft butter
2 cups sugar
3 eggs
2 tsp vanilla
1.5 cups buttermilk OR milk soured with one tbsp vinegar or lemon juice 

Ingredients for the Frosting:
1/2 cup softened butter
8 oz cream cheese room temp.
1 tsp vanilla
3.5 cups icing sugar also known as powdered sugar or confectioner's sugar

Instructions:
Pre-heat oven to 275 F, and grease and flour (or spray), a 9x13 cake pan.
Mash banana and mix with lemon juice and set aside.
In a med bowl, mix flour, baking soda and salt. Set aside.
If you're making your own buttermilk, combine milk and vinegar (or lemon juice) in a small bowl, and set aside.
In a large bowl, cream butter and sugar.
Beat in eggs, one at a time. Stir in vanilla.
Beat in flour mixture alternately with buttermilk.
Stir in bananas.
Pour into cake pan and bake 1 hour and 10 mins (or until knife comes out clean). *if need be, cook longer, checking every 10 minutes until cake is fully cooked.
Immediately place in freezer for 45 minutes. (if not completely cool upon removal from freezer, let cool further before icing).
Cream butter and cream cheese.
Beat in vanilla and icing sugar on low until combined, then high until smooth.
Frost cake and enjoy!

Maureen was a wonderful mentor to me.
She always exhibited true advocacy for her patients.
She always gave me encouraging feedback at work and in my personal life

I was in my first few years of nursing when my path crossed with Maureen's at the Legacy Good Sam Clinic. She provided an informal mentorship to me in our few years of working together and I am forever a better nurse for her teaching me about true patient advocacy. I will also remember her laugh that could be heard from several rooms over. Sending love and comfort to Maureen's family and friends <3  

I'm saddened to hear of Maureen's passing. We were good friends in high school and enjoyed competing academically! Praying for peace and comfort for her son and family.

I will miss your freckles, your beautiful smile, your wry sense of humor, your expert medical advice. Most of all your love and support thru the years. You have touched so many lives as a nurse and such a devoted mother and Auntie. You definitely have a special place among the angels. 

Maureen was a lovely spirit . She had a great sense of humor and was very smart as well as kind . 
I always looked forward to seeing her and hearing what she had to say . She added so much to our FSI group . She loved Matt dearly .
I will miss her and I feel lucky to have known her .
There will be a special place in heaven for Maureen .

I remember when Maureen moved to Morris. We were Candy Stripers at the hospital and Nursing home, and Future Nurses of America . We liked the nursing home better. They let us do more   I remember we had a surprise birthday party for her in high school. Quiet , kind, smart and funny. We reconnected thru face book and shared cat stories, nursing and Mission work. My sympathies to Matt and family.   

I am  a 1973 Morris High School classmate of Maureens.  We were close friends in school and hung out together.  I missed her dearly when she moved from Morris right after our H.S. graduation.  She was a wonderful friend and I have thought of her often.  We connected via Facebook in our later years and she often talked about her son and her cat.  I am sorry to hear of her death.  I will keep you all in my prayers.

I am deeply saddened to have lost my friend Maureen.   She was the most amazing mentor who taught this newbie MA how to advocate and care for patients. After almost 8 years on the job, I try to mimic her in giving the care she provided to patients. She was fierce in making sure her patients were taken care of and pushed other healthcare workers outside of our clinic to do their jobs if they weren’t doing what needed to be done for patients. Maureen and I used to say we were going to be roommates in Dr Folger’s nursing home and ask her to write orders for us to have wine at night.
