Matthew Min Choi was born in Portland, Oregon on October 22nd, 1987 to Pom and Chong Choi. Matt grew up in Gresham, Oregon and graduated from Gresham High School in 2006. He then attended the University of Oregon where he graduated with a Bachelor of Arts in Business Administration: Marketing, Sports Business. In 2011, Matt and his mom started Choi’s Kimchi Co. selling his mom’s beloved kimchi at the Portland Farmers Market. He helped grow Choi’s Kimchi into a full-fledged specialty food manufacturer producing kimchi, pickles, and sauces. Matt cared deeply for his family and his local community. He was actively involved with many small business organizations and always shared his advice, mentored others, and offered support in any capacity he could. Matt honed his entrepreneurial spirit by watching his parents relentless hard work. His dream was to grow Choi’s Kimchi big enough so they wouldn’t have to work anymore.
Matt loved music and would love to share the latest songs he had discovered, which covered an array of genres from jazz to hip hop. He had dee-jayed events from weddings to friends’ parties. He loved and cared for others and would sacrifice his own time and self to help his friends and family. He was a fun-loving individual who was always curious about the world and loved to travel when he could.
Matt is survived by Grandmother, Ok Sun Kim; Father, Pom Choi; Mother, Chong Choi; and his brother, Peter Choi.
Thanks to all for the love and support that everyone has shown Matt. He will be greatly missed, but never forgotten.
