Karen Lynn (Engvaldsen) Day, 72, of Mesa, AZ, passed away on May 29, 2022, following a brief illness, surrounded by her loved ones. She was born in Brooklyn, NY on December 17, 1949, to Harvey and Gladys (Phillips) Engvaldsen. She graduated from Delaware Valley High School in 1968 and married her best friend and love of her life, Edwin Ellis Day, on Christmas day that same year. They raised two children, Tracy and Stephen, in Honesdale, PA, before retiring and then moving to Arizona in 2019.
Along with her husband, Karen was the proprietor of Day’s Bakery on Main Street in Honesdale and filled several roles there until it closed in 2017. She also worked for over a decade at The Honesdale National Bank before retiring in Arizona, where she was proud to be “Bimmy” to her grandson, Stephen.
She was an excellent mother, sewing all her children’s clothing when they were young, cooking great meals, keeping an immaculate and well-decorated house, welcoming over her children’s friends, and planning fun vacations, parties, and family get-togethers.
She loved to have fun and enjoy life. Some of her favorites were playing bingo, going on scrapbooking retreats, reading, listening to country music, eating M&M’s, and following friends and family on Facebook. She also loved anything red and anything Disney. Her dream was to take her grandson to Disney World, which she had planned to do just a few weeks after she passed.
She was happy to attend Trinity Church in Mesa, AZ, and she was a member of the Order of the Eastern Star - Laurel Chapter 67. She and her husband also enjoyed participating in many fundraisers over the years.
She was preceded in death by her parents and her husband. She is survived by her daughter, Tracy (Edmundo) Sanchez; her son, Stephen Day; her grandson Stephen Sanchez; her sisters, Carol Patroni, Alice Frolio, and Trudy Biccum; her mother-in-law; brothers and sisters-in-law; and nieces and nephews and their families.
A small, private service was held on Wednesday, June 1 at Advantage Melcher Chapel of the Roses in Mesa, AZ.
