March 21, 1946 to Maurice and Doris Maudsley Day. He graduated from Honesdale High School in 1965
and The Culinary Institute of America in 1968. Later that year he married his sweetheart, Karen
Engvaldsen.
Eddie was heavily involved with the Freemasons. His Masonic affiliations included Honesdale Lodge No.
218 F&AM, Anthony Wayne Chapter No. 204 RAM, Scranton Council No. 44 R&SMM, Savona
Commandery No. 89 KT, Irem Shriners, and Eastern Star.
He was best known for his scrumptious baked goods at Day’s Bakery on Main St. in Honesdale, PA,
which he owned and operated from May 1982 until April of 2017. People came from far and wide for his
brownies, chocolate butter press cookies, face cookies, lebkuchen, Christmas cookies, rum balls, nutty
doughnuts, cakes, pastries, pies, parker house and butter rolls, and his wide variety of breads. He loved
to donate his baked goods to charitable causes whenever he could.
As much as he enjoyed baking and interacting with his customers, nothing brought him more joy than
his family. His happiest moments were those spent with his loved ones. He especially cherished the time
he spent with his grandson, Stephen.
He was preceded in death by his father, Maurice, and his brother, Maurice “Elmer.” He left behind a
loving family, including his wife, Karen; his daughter, Tracy Sanchez and her husband Edmundo, and
their son, Stephen, of Gilbert, Arizona; his son, Stephen Day, of Scranton, PA; his mother, Doris Day, of
Honesdale, PA; his sister, Carolyn and her husband Bobby Love, of Florida; His sister, Lois Day of Pittston, PA; his sister-in-law, Treva Day of South Canaan; and many nieces and nephews.
A celebration of Eddie’s life will be held on Saturday, November 13 at 2:30 PM in the Wesley Room at
Central United Methodist Church in Honesdale, PA, with visitation beginning at 1:00 PM. Masonic and
Order of the Eastern Star services will be held. Masks will be required for visitation and services.
