Soila was a member of San Ramon Catholic Church. Her and her late husband, Dionel also owned and operated El Nene’s restaurant in downtown Lubbock for many years. She lived her life to the fullest and was always sharing her love of cooking, including her famous beef enchiladas and empanadas, with her family, friends, and neighbors. Her grandchildren were the lights of her life; every opportunity she had she made sure they knew they were loved and special and would share their accomplishments given any opportunity.
She was preceded in death by her husband Dionel, parents, and brothers and sisters. She is survived by two daughters and sons-in-law, Sylvia and Jaime Hinojosa of Lubbock and Synthia and Domingo Garcia of Leander; two sons and daughters-in-law, Lee and Rosa Coy of Lubbock and Joe and Trish Coy of China Springs; spouse, Hector Serna; 11 grandchildren and numerous great and great-great-grandchildren and nieces and nephews.
