

“As the lid is removed from the container, the sound of a bustling restaurant is immediately cut by the sizzling of pork belly. Steam immediately rises from the container, filling my nose with thousands of flavors. My mouth waters as I quickly grip my chopsticks. As I look at my stronger, faster brothers, I realize I need to act immediately otherwise I risk…I look down at my plate and see the glistening pork belly on it. A hand is placed on my shoulder and as I look to find the source, my eyes lock with my grandfather.
When looking back at my grandfather’s life and what he meant to me, I always come back to this memory. It was a simple act, placing some food on my plate, but it was this mundane, everyday act that revealed to me what my grandfather lived for. He lived to care for us and every decision he made was with us in mind.”
It is with deep sorrow that we announce the passing of Gilbert Eng, who departed from this world on December 22, 2023 at the age of eighty-three. He left us surrounded by the love of family and friends. Gilbert was born on July 2, 1940 to Nelson Woo and Au Yeung in Hong Kong. Gilbert was a man who cared deeply for his family and lived to provide them with the best life possible. Gilbert was a man who spent his life caring for others in his work life. One of his major accomplishments was pleasing guests as General Manager for Marriott International. He spent over twenty-five years managing Marriott's ever-expanding international network of hotels in Asia. Gilbert was a true leader, sincere and honest. He was a mentor and advocate to all who worked with him.
He is survived by his wife: Ellie; his brothers: Bob (Sue), Stanley (Pat), Tommy (Stephanie); his sons: Henry (Marilu), Andy (Cari) and Samson; his grandchildren: Jacob, Alex, Jonathan, Austin, Christopher, Joseph, Adam, Julia, and Sophia.
A memorial service will be held on December 28, 2023 at Palm South Jones Mortuary from 1:00-5:00PM.
May Gilbert rest in peace and may his memory be a source of comfort and strength to all who knew and loved him.
