As a young girl, Esther had vivid memories of World War II and remembers having to hide in underground bunkers for safety. She spoke very lovingly about the Americans who would give her cornflakes as a treat. Even as an adult, Esther loved cornflakes. Growing up, she enjoyed listening to stories about the Bible from her father and loved working in the garden with him. Later, Esther moved to Spain to work in a textile factory. Not long afterwards, the owner of the factory asked Esther to move to his home and care for his children. During this time (1975), an American Attorney asked if she would come to the United States and become a Nanny for their children. Esther cared for their children twelve years and formed a relationship with their family that has lasted over 30 years.
Esther met Joseph Clark Collins at church and they married on May 17, 1987. She never lost interest in her passion for sewing and became a self-taught, professional seamstress.
Services for Mrs. Collins will be private. Interment will be private in Forest Park Westheimer Cemetery, Houston, Texas.
