Shen-Fan Huang was born on April 18, 1920 in Beijing, China. She attended Yen-Ching University in China and graduated with a B.S. in Home Economics in 1945. After graduation, she married Chi-Yu Huang in 1945. She had a decorated career as a professor in Taipei, Taiwan, which included 35 years at the National Defense Medical Center from 1951-1986, 22 years at the College of Chinese Culture from 1964-1986, and 21 years at Fu-Jen Catholic University from 1965-1986. She also served as Dietetic Consultant at the Tri-Service General Hospital. Amidst her career, she completed dietetic internship training at Duke University Medical Center in Durham, North Carolina from 1959-1960. During her work at the National Defense Medical Center, she earned the rank of Colonel (making her the second highest ranked female officer in Taiwan in her time). She was beloved by all of her students, and today they are all over the world, living with the knowledge, wisdom, and compassion she imparted to them. She was always teaching others throughout her life. By God’s grace, she went with the Lord peacefully in sleep on April 9, 2013.
