Quan Ying Chun Lee, 95, passed away on July 21, 2022, in the loving presence of her family. She is survived by her children, Arthur (Keri), Adele (Jerry Goffard), Annabelle (John Erickson), and Adrian (Dayle); her six grandchildren Daniel (Maily Hoang), Norwick, Amanda Goffard, Alyssa Goffard, Amy (Jeff Kwock), Aaron; and the numerous other family members and friends whose lives she touched.
The daughter of Woon Wo Chun and Choi Kam Chun, Quan Ying was born on January 19, 1927 in Guangdong province, China. She grew up in Sah Kok Bu village and married her husband, Sing Joy Lee, who came from Hung Mei village, on September 24, 1948. In 1953 at the age of 26, she moved to the United States, where she had four children with Sing Joy. After Sing Joy passed away in 1961, Quan Ying continued to provide for her children by working as a waitress and then manager of the Tin Tin Chop Suey restaurant in Honolulu. She also worked at Waimalu Chop Suey.
Her mother, Choi Kam Chun, joined her from China in 1965 and helped her raise the children while she worked.
She always enjoyed traveling all over the world, including China, Japan, Inner Mongolia, Southeast Asia, Australia, Europe, Canada, Trinidad and many places within the United States. She also enjoyed cruises to Alaska, Mexico, the Northeast, and through the Panama Canal.
Quan Ying’s own education was interrupted by war at an early age, but she continued her education as an avid reader. She instilled in her children the value of of a good education, and all her children and grandchildren graduated with college degrees. She made a profound difference in the long-term path of her family to a better life.
She was a member of the Mong Won Tan Temple and a devout Buddhist, helping many others in her extended family and community, especially those adjusting to new life in America. She faced and persevered through challenges, and placed high value on family and community.
Visitation will be held on August 22, 2022, at 9:30am at the Borthwick Mortuary Makai Chapel, Buddhist service at 10:30 am, with burial at 1pm the same day at the Manoa Lin Yee Chung Chinese Cemetery.
