A celebration of life funeral service for Karen will be held Saturday, February 11, 2023 at 11:00 AM at Stonebriar Funeral Home and Cremation Services, 10375 Preston Road, Frisco, TX 75033. A committal service will occur Tuesday, February 14, 2023 at 12:00 PM at Moore Funeral Home & Memorial Gardens, 1219 North Davis Drive, Arlington, TX 76012.
Karen Eileen Fox, known to most as Eileen, passed away peacefully on Sunday February 5, 2023, at her home at Bethesda Gardens in Frisco, Texas at the age of 78.
She will be lovingly remembered by her three children: Eric (Vanessa) Roubinek, Eileen (Robert) Rodriguez, and Eddie (Cindy) Roubinek. Eileen had six grandchildren: Brandi, Brittany, Bailee, Jordan, Ralph, and Kaitlyn; and seven great grandchildren: Rileigh, Jackson, Grady, Lincoln, Keeghan, Kye, and Kenlee. She is also survived by her brother Stephen (Patrice) Griffitts and her beloved dog, Castle.
She is predeceased by her husbands, Denny Roubinek and Prentice Jr. Fox; her sister Delores Johnson, and her parents, Delmer and Mollie Griffitts.
Eileen was born in Plainview, Texas, on May 9, 1944, the second of three children. After her family moved to San Diego, California, she graduated from Clairemont High School in 1962 where she served as a Majorette and met her first husband, Denny. After they were married later that year, the couple moved to Fairbanks, Alaska, where she gave birth to her first two children, Eric and Eileen. After they moved back to San Diego in 1968, she delivered her third child, Eddie.
Eileen studied Criminal Justice at the University of Texas Arlington. She worked as Office Manager/Paralegal at Bailey and Gaylen, Attorneys at Law, as Cash Manager at The Western Company of North America, and Bookkeeper/Receptionist at Johnson & Johnson CPA, PC.
She was devoted to her dogs, all of whom were dachshunds: Max, Zeke, Gretchen, a second Max, and Castle. Eileen loved to read, amassing hundreds of books in her personal collection, many of which she read multiple times. Her hobbies included collecting china plates hand-painted by her mother and aunts, putting together jigsaw puzzles, playing games, especially Left, Right, Center and Chicken Foot, and gardening. While living in both Commerce and McKinney, Texas, she was a member of the local gardening clubs.
Eileen enjoyed having a glass of wine on her patio and conversing with neighbors while Castle barked at everyone going by.
A funeral service will be held at 11:00 a.m. on Saturday, February 11, 2023, at Stonebriar Funeral Home at 10375 Preston Road, Frisco, Texas 75033. A private interment will be held later in the week at Moore Funeral Home and Memorial Gardens in Arlington, Texas.
Donations, in lieu of flowers, can be made to the Humane Society of North Texas or the Dallas- Fort Worth Dachshund Rescue Foundation.
