Cuellar, Jr., Frank X. Frank X. Cuellar, Jr., died Jan. 4, 2014. Born on Oct. 12, 1929, in Terrell, TX, Frank was preceded in death by his parents, Julia Flores and Frank Cuellar, Sr., and his brother J. Robert Cuellar, and his wife, Barbara. Frank is survived by his wife of 53 years, Marcia Stiles Cuellar; son Frank Cuellar III and his wife Michelle, their children Mariah and Frank IV; daughter Alycen Cuellar, Peter Mani, and Peter Alexander Mani; daughter Adrien Cuellar-McGuire, son-in-law Christopher McGuire, their children Ryan and Ellen; brother John Cuellar and his wife Susan; two nephews, three nieces, four grandnephews, and one grandniece. Frank graduated from St. John's Jesuit High School in Shreveport, received a BBA from SMU, and served in the 5th Photo-squadron of the US Air Force during the Korean War. He was Senior Vice-President of Public Relations and Secretary-Treasurer of El Chico Corporation. Among many accomplishments at El Chico, Frank helped start the canned and frozen food division; marketed these products in the US and overseas; took the company public on the NYSE; recruited employees to join one of the earliest stock-options programs for restaurant employees; and helped produce a multimedia marketing package called "The El Chico Story." He sat on numerous boards including: Dallas Restaurant Association (serving as president as well), Texas Restaurant Association, National Restaurant Association, El Centro Food Service Institute (30 years), DCCCD Foundation Board, Lighthouse for the Blind, Methodist Hospital Board of Trustees, UTSW Medical Heart and Lung Foundation Board, National Conference of Christians and Jews (twice co-chairman), Metropolitan Serra Club (founding member), Christ the King Education Trust, Knight Grand Cross of the Holy Sepulchre of Jerusalem, Catholic Community Appeal (15 years), and supporter of Our Lady of Perpetual Help Catholic School. Memorial Mass is at 10 AM on Saturday, January 11, 2014 at Christ the King Catholic Church. Rev. Msgr. Donald F. Zimmerman, Celebrant.
