Born on June 28, 1950, in Georgia, Cathy was the cherished daughter of Ruby Jewel Sprott and Van Buren Easterday. She grew up with two younger brothers, Robert and Scott Easterday, who were her lifelong companions. The family’s journey took them from Georgia to places like Hawaii, where Cathy embraced the island's culture, even learning to hula dance as a young girl. However, it was their eventual move to California that would shape the course of her life. While attending San Gorgonio High School, Cathy met Frank Pincelli, the love of her life. Their bond was instant, and they were married on November 8, 1968. Together, they built a beautiful life and raised two sons, Gabriel and Jonathan, in Southern California. Those who knew them would describe their love as something truly special and rare.
Cathy embraced one of her most cherished roles when she stepped in to raise her first grandchild, Chelsie, with unconditional love and dedication. This act was just one of the many ways Cathy was known for her unwavering support and boundless heart. Throughout her life, she wore many hats—volunteering as a school mentor and tutor, and even supervising children on the playground, always lending a helping hand where it was needed. She was happiest when surrounded by her family, especially during the holidays, with Christmas being her favorite. The joy of those celebrations, filled with love and laughter, will always be remembered fondly by those closest to her.
Outside of her family life, Cathy found joy in dancing. Whether it was grooving to disco with friends, dancing in the car, or reliving her youth with the hula while vacationing in Maui, she brought light and fun wherever she went.
Her deep faith in God was a guiding force throughout her life. Cathy often said, “Faith over fear,” a mantra that reflected her unshakable belief in God’s plan. This faith carried her through life’s challenges, and she held onto it until she was called home to heaven.
Cathy is preceded in death by her beloved parents, Van Buren Easterday and Ruby Jewel Sprott.
She is survived by her devoted husband, Frank Pincelli; her two brothers, Robert and Scott Easterday; her sons, Gabe Pincelli (Amy Pincelli) and Jon Pincelli (Mesa Maddux); her grandchildren, Chelsie Pincelli (Michael Hammock), Quint Pincelli (Kenzie Pincelli), and Chad Pincelli; and her great-grandchildren, Audrey Pincelli and Auden Pincelli-Hammock.
