Born in Worthington Minnesota, she was raised on a farm in rural southwestern Minnesota. As a young woman she moved to Minneapolis where she met her husband William McCoy “Bill”. They knew within a short period that they were meant to be together forever and married February 19, 1955. Their marriage spanned 65 years enjoying a loving and adventurous life together.
They raised six children in the Minneapolis area before moving to Boulder CO in early 70’s. After all the children were of school age, she attended Midwest Business College where she received a degree in Business.
Elizabeth was a very accomplished woman working for the government for twenty years in management and business development, retiring in 1995 as the Administrative Officer for the Department of Justice.
Once retired they purchased a fifth wheel RV and truck. In a fifteen-year span, they visited over 40 states, Canada and Mexico.
She had extensive collections of angels, crystal bells and teddy bears. Her collection of teddy bears went to the Westminster police department to provide bears to children during stressful times like domestic situations to take their minds off the disruption to their lives.
She was an incredibly talented and creative woman starting with designing and creating clothes for her paper dolls as a child to bisque dollmaking after she retired. She enjoyed so many creative outlets; sewing, drawing & painting, woodworking, stain glass, knitting, vegetable & flower gardening to name a few.
Elizabeth is survived by her loving husband William McCoy along with her six children Shawn, Kim, Joni, Jayme, Kyle and Kelly all residing in Colorado, nine grandchildren Jessica, Nicole, Marcus, April, Ryan, Nathan, Levi, Thor and Cain, and twelve great grandchildren Delanie, Ava, Caleb, Raven, Colt, Thea, Jax, Penelope, Jude, Diesel, Ayden and Addisyn.

Funeral Service will be held at 1:00 on Friday, October 18, 2019 at Our Lady of the Pines Church located at 11020 Teachout Road, Black Forest CO 80908.
Reception will immediately follow at their home 5995 Fescue Drive, Colorado Springs CO 80923
