

Irene Grimes Eubanks, 87, of Matthews, entered in to rest on Friday, September 9, 2016 at Novant Health Matthews Medical Center. A native of Cabarrus County, she was the daughter of the late Junius Summerfield Grimes, Sr. and Elsie Irene Boyles Grimes. In addition to her husband and parents, she was preceded in death by her brother, Pete Grimes and by a sister, Jac Griffin.
Irene was known for her artwork. She painted gourds, bird houses, was a costume designer, and loved to work with her hands. She was kind, well-loved and never had any harsh words about anyone. She was witty, had a great sense of humor and nurtured her daughters’ free spirits. Along with her husband, Henry Otis Eubanks, Jr., she was a member of the Korean War Veterans Association and was instrumental in getting the Korean War Veterans Memorial in Veterans Park in Mint Hill. She loved sports. Throughout her years at Oakhurst High School, she loved to play basketball. In fact, she and her sisters comprised a majority of the team there.
Irene is survived by her daughters, Elsie Eubanks Rabon and husband Adam of Charleston, SC; Summer Eubanks of Charlotte and Alice Eubanks Andrews and husband Ben of Charlotte. Also surviving are her grandchildren: Sarah McEachern and husband Paul; Cooper Ferguson and wife Danielle; Laura Andrews and husband Adam Bobyarchick; and Benjamin Andrews. Great-grandchildren Ian McEachern, Joseph McEachern, Mikayla McEachern, Kate Ferguson, and Henry Ferguson also survive. Three sisters, Jo Morehead, Alice Redd, and Ann Thrower survive along with a lifelong friend, Colleen Ligon of Charlotte. Her beloved Chihuahua Bitsy and Whippet Annie are left to cherish her memory.
A graveside service will be held at 11:00 AM on Monday, September 12, 2016 at Sharon Memorial Park.
