Minnie Toledo Cortez

Minnie was born July 9, 1940, in Rosebud Texas to Juan and Maria Constancio. She moved to Bryan after marrying her husband Pete Toledo on June, 1959. Minnie and Pete had three children: Victor, Norma, and Sonny. Minnie was a restaurant owner before she retired. Minnie was also actively involved in St. Teresa Church and St. Joseph Church throughout her lifetime.

Minnie loved the outdoors; she often found herself fishing, relaxing at the lake, traveling, and making new friends. But most of all, she enjoyed spending time with her family and friends. She loved cooking and reminiscing with family, so it was only natural that she hosted Sunday gatherings for everyone to enjoy. Later in her life she found her peace by sitting on the porch with her second husband, Ernest, while engaging her favorite hobby, crocheting.

Minnie is preceded in death by first husband, Pete Toledo; second husband Ernest Cortez as well as her eldest son Victor Toledo.

She is survived by her daughter Norma Toledo and husband Ivan Tijerina as well as her son Sonny Toledo and girlfriend Alicia Hernandez. Minnie is survived by two sisters Millie Constancio and Alice Medrano, husband Rudy Rueda .

Minnie has five grandchildren: Ivan Tijerina, Jr and wife Sherri Tijerina, Melissa Gaitan and husband Frankie Gaitan, Pete Tijerina, Joshua Toledo, and Caleb Toledo.

Minnie also leaves behind 4 great-grandchildren: Ethan Tijerina, Audra Tijerina, Donavan Gaitan and Delila Gaitan.

A visitation for Minne will be held Sunday, June 18, 2023 from 6:00 PM to 8:00 PM at Memorial Funeral Chapel, 1515 South College Avenue, Bryan, Texas 77801. A rosary will be receited Sunday, June 18, 2023 at 7:00 PM, at the funeral home. A mass of christian burial will be held on Monday, June 19, 2023 at 10:00 AM at St Joseph Catholic Church, 600 E 26th St, Bryan, Texas 77803. Interment will follow at Mount Calvary Catholic Cemetery.
