Josefa was born on March 19, 1929 in Gulf, Texas to Tomas and Ramona Maldonado. She lived in Wharton, Texas before moving to Beaumont in 1964. She worked as a cashier at Weingarten's, but her full time job was taking care of her kids, Rosendo and Vera. She loved to cook and bake, and was famous for her fideo and red potatoes. She loved spending time with her fellow cook, son-in-law Joe, sharing recipes. Her favorite pastime was saltwater fishing, and you could always find her at Rollover Pass with her trailer.
She loved her family and she loved her dogs (at one time she owned 5). She also loved her Houston Astros. She was a beautiful person who was always smiling. She was a caring person and was always willing to help others. While living in Wharton, she helped to take care of an elderly couple who lived down the road, cleaning their house and bringing them home cooked meals.
She is preceded in death by her husband, Rosendo Jimenez Sr.; and her parents; her brothers Tomas and Chrispin; and sisters Ramona, Paula, and Janie.
She is survived by her son Rosendo Jimenez Jr. and wife Juanita; daughter Vera Hebert and husband Joe; grandchildren Richard Guzman, Steven Guzman, Elizabeth Jimenez-Clarke and husband Zac, and Susan Garcia; great grandchildren Matthew Guzman, Miguel Aguilar, and John Aguilar; niece Esther Biano and husband Mike; brother Jose Maldonado; and sister Lupe Rios and husband Mario.
A Gathering of Friends and Family for Josefa will be held Monday, December 19, 2022 at 12:00 PM at Forest Lawn Funeral Home, 4955 Pine Street, Beaumont, Texas 77703, followed by a Celebration of Life at 2:00 PM.
