Paul was born to parents Joe Lee Ellis and Louise Ellis on June 23, 1950 in Memphis, Tennessee. As a teen, he loved spending his time playing sports with his friends at city ballparks and dreaming of being a cowboy in the old west. As he grew older, he enlisted in the United States Air Force and served his country for 24 years before his honorable discharge in 1993. Paul attended Saint Edwards University to study accounting and continued to serve his country as an Auditor for the Department of Veterans Affairs until his retirement.
In 1981 in his early thirties, he met and fell in love with Jennifer Ellis in Halstead, England. Within a year they had started a family, complete with two children, Peter Jones and Jeffrey Ellis. As a family they loved traveling, spending time together, and experiencing life as a military family. Being a kind and dependable father was of the utmost importance to Paul and he certainly did not disappoint when it came to wholeheartedly loving those close to his heart.
Paul is survived by his children Peter Jones and Jeffrey Ellis and partner Sheldon, his sister-in-law Peggy Heavingham, his sisters, Barbara Jean Cole, Dorothy Ellis, Priscilla Walker, Cora Johnson, Nora Evans, his niece Chandra and partner Eric Ford, and his pet pug, Lexie. He was preceded in passing by his wife of 39 years, Jennifer Ellis, his parents Joe and Louise Ellis, his Brother Louis Owens and sisters Joanne Ellis and Lois Ellis.
The funeral service will be held at Fort Sam Houston on November 4th, 2021 at 11:00 am CST. There will be visitation at Cook Walden/Forest Oaks on November 3rd, 2021 beginning at 5:00pm CST. His family will be present to welcome loved ones.
