She graduated from Spring Woods High School in Houston and later became a registered Massage Therapist and used those skills to minister to the people attending retreats at the Cenacle Retreat House. She worked hard to earn her Black Belt in Karate. Ikey also attended Clown College and truly loved entertaining others as "pockets" the clown. She trained as a Spiritual Director and was especially proud when she achieved the Third Order of Franciscans (OSF), with the ST. Maximilian Kolbe Secular Fraternity at St. Jerome Catholic Church. Other groups that she was involved with at St. Jerome include: Catholic Daughters, the Choir and as a cantor, the ACTS group, as well as the Senior Group. The last several years Ike worked as a home health care worker after honing her skills while caring for her mother,Katie, before she passed away. Whatever she was doing, people noticed her cheerful, caring ways, her humor and kind, compassionate manner.
Eileen was preceded in death by her parents, Peter W. "Pete" Colleton and Catherine H. "Katie" Colleton and her younger brother Gilbert "Bert" Gutierrez Colleton. She is survived by her five sisters: Mo Watkins and her husband Danny (LaRue, TX), Daphie Atkinson and her husband Rich (Tucson, AZ), Chris Beyer and her husband Steve (Kingwood, TX), Paulie Lee and her husband Dulen (Austin, TX), and Joleen "Jo" McMurray (Vancouver, WA), as well as nine nephews, two nieces, three great nephews, three great nieces and one great-great nephew.
Visitation with the family was held from 6:00 p.m. until 8:00 p.m. on Thursday, November 2, 2023 at Waltrip Funeral Directors, 1415 Campbell Road in Houston, Texas, where The Rosary was recited at 6:30 p.m. The Funeral Mass was celebrated at 10:00 a.m. on Friday, November 3 at St. Jerome Catholic Church, 8825 Kempwood Drive in Houston. The Rite of Committal followed at 1:30 p.m. in Woodlawn Garden of Memories, also in Houston.
