Eunice "Polly" Collins passed away peacefully on August 1, 2020 after a long battle with Alzheimer's Disease. Eunice was born Feb. 6, 1924, the first child and only daughter of Mabel and Ollie Parrott. She grew up in Zavalla, Texas until she was old enough to enter nursing school at St Marys in Galveston, Texas. After graduation, she entered WW II as a young Lieutenant in the Army Nurse Corp. During her time in the war, "Polly" Parrott (a nickname she loved that was given to her during the war) served in several places, including the Philippines and ultimately Japan immediately after the war ended.
After the war, Eunice married Joe Perkins and they had two children. Unfortunately, Joe passed away unexpectedly and left Eunice to raise two small children alone, while working as a nurse and pursuing a BSN and MSN. In a well deserved retirement, she enjoyed writing, reading and travel.
Eunice is survived by her two children, Joe (Judy) Perkins, and Patrice (Jim) Creswell, five grandchildren and 10 great grandchildren. She was especially fond of her five brothers and sisters-in-law; three of those brothers survive her.
Interment of ashes will be at Ft. Sam Houston National Cemetery, Sept. 2, with a small family service. A larger family memorial will hopefully be possible at a later date.
In lieu of flowers, please donate to the Capital Area Food Bank.
