Eddy was born and grew up in Cameron, Texas. Known throughout the area as an outstanding athlete, Eddy continued to excel at both football and track and field after his graduation from Yoe High. He attended and competed in sports at Shiner University in Kerrville, Texas prior to serving two years in the Army. Following his military service he returned to both academics and athletics at Victoria College followed by Southwest Texas State where he earned his Bachelor Degree in Science and later received his Masters in Education. He began his career as the Head Track and Field Coach and Assistant Football Coach to the legendary Bernard Birkelbach in Georgetown, TX. Next he would become Athletic Director and Head Football Coach in Carrizo Springs, Texas. One of his fondest memories was taking Carrizo's mile relay and sprint relay teams to the state meet in Austin.
Eddy and Carrizo Springs proved to be a great fit. An avid outdoorsman, he loved to hunt, fish and play golf at the Carrizo golf course that he helped build alongside a number of his lifelong friends. After ten fantastic years in Carrizo Springs, he returned to Central Texas as a school Principal in Taylor, Texas, a position he held until his retirement. Eddy became known throughout not only Texas but the entire US as a top Track and Field official. He officiated 35 straight Texas Relays and UIL State Track and Field Championships. His officiating resume consists of numerous US Amateur Championships, NCAA Championships, the Pan American Games, multiple Olympic Trials and it is topped off with The 1984 Summer Olympics in Los Angeles and the 1996 Summer Olympics in Atlanta. In 1996 he was presented with the Horace Crow Distinguished Official Award designating him the top Track & Field official in the United States.
Never one to meet a stranger, Eddy loved playing his guitar and will be most remembered by his friends for his smile and love for adventure and pursuit of a good time. He often handed out his business card that read: Eddy Lankford A.K.A. Principal, Track & Field Official, Public Speaker, Chili Cooker, Mexico Tour Guide / Track Meets Started, Cinco De Mayos Panned, Wars Fought, Up Risings Quelled, Revolutions Started, Tigers Trained and Boats Sailed.
