Eric was born in Denver, Colorado, on December 30, 1975, to John and Cindy Rundstrom. He left this earth on December 26, 2023, as a result of injuries sustained in a single-car accident. Eric attended Denver Public Schools and graduated from South High School in 1994. Following graduation he moved to Lincoln City, Oregon, to work with his dad and learn the plumbing trade. In 2002, he married Amanda Welch. Together they had one daughter, Caitlyn Grace, who was the light of his life. He returned to Denver in 2011.
Eric was an avid sports fan and followed all of the Colorado/Denver teams- especially the Broncos. He could be seen sporting team logo hoodies throughout the year. He loved playing in the summer softball league in Lincoln City – playing every game as if it were the World Series. He also had a regular group he played pickup basketball with. He was a great 3-point shooter.
He had a unique quality to his voice and had an infectious laugh. He loved to have a good time with his friends and family. The annual pig roast his dad hosted was something he always looked forward to.
Eric is preceded in death by his father and stepmother, John and Elaine Rundstrom, his uncle Bryce Barger, his maternal and paternal grandparents. He is survived by his mother Cindy; daughter Caitlyn; uncle Ken (Anne) Barger; Jeff (Bill) Koch, step-brother; Gretchen Kinka, step-sister; uncle Ritch (Jackie) Rundstrom, uncle Jim (Ellen) Rundtrom, aunt Joyce (Lee) Martin, and many Rundstrom cousins.

A funeral service for Eric will be held Tuesday, January 9, 2024 from 10:00 AM to 11:00 AM at Olinger Highland Mortuary & Cemetery, 10201 Grant St, Thornton, CO 80229, followed by an entombment from 11:00 AM to 11:30 AM.
