Eileen is survived by her husband, James Hugh Davis, Sr.; her brother, George Cooke; and her children: James “Jimmy” Davis, Jr. (Tonya), Paul Davis (Anne Marie), Lynn Davis McMahon (Philip “Phe”); Aleta Davis Dempsey (Stephen), Susan Davis Naquin (Ryan), Edward “Eddie” Davis (Karin), and Rebecca Davis (James Johnson). She is also survived by her grandchildren: Brandy Davis Fryou, Jamie Davis Stephenson, Frances Davis, Noah Davis, Sarah Davis, Philip McMahon, Mary McMahon, Julie McMahon, Mindy Forehand, Madison Martin, Thomas Dempsey, Brittani Hartman, Seth Plaisance, Connor Plaisance, Ellen Davis, Cecelia Davis, Graham Mizell, Anna Johnson, and Hugh Johnson, and 11 great grandchildren.
She was preceded in death by her parents, Hazel Hebert Cooke and Paul Townsend Cooke; her sister, Martha Cooke Louviere; and her brother, Paul Michael “Mike” Cooke.
Eileen grew up in Thibodaux and Houma and graduated from St. Francis de Sales School. She completed a bachelor’s degree from Nicholls State University in 1984, while raising her family. She worked in a Nicholls State University grant program that supported educational opportunities for single mothers and then later at Young Memorial Vocational-Technical School.
Eileen was a wonderful wife, mother, and friend. Her life was an example of love, generosity, compassion, and faith. Her light and laughter will be forever remembered.
A private Mass of Christian Burial will be celebrated by the family. They ask that in lieu of flowers, donations to the Nicholls State University Foundation or the Hydrocephalus Association be made in her memory.
Eileen’s family would like to give special thanks to those who lovingly assisted in her care, especially the staff of Maison Jardin, Haydel Memorial Hospice, and Dr. Jody Plaisance.
