Carolyn Lee Hubbuch Knop, 88, of Louisville, passed away Monday, August 23, 2021. She was born, August 4, 1933 to the late, Cornelius E. Hubbuch and Mary Louis Rueff Hubbuch. She was a graduate of Stevens College in St. Louis, Missouri.
She was preceded in death by her parents, and her loving husband, Otto F. Knop in 1987, her son, Otto Craig Knop 2018 and a granddaughter Maria Lynn Long in 2002.
She is survived by her children; Cara Boone (Richard), Brian Knop (Ellen), Kurt Knop, Donna Long (David), Caroline Knop (Michael), Tamara Demuth (Tommy), Eric Knop (Marlene), and her daughter-in-law Karen Jaggers Knop. She had 17 grandchildren, and 11great grandchildren.
She is survived by 4 siblings: sister Marilyn Allen, Brother Cornelius Hubbuch, brother John Hubbuch and brother Glen Hubbuch.
Carolyn (DeeDee) was a loving wife and mother. After losing her husband at age 56, she continued to serve as a role model and inspiration to her many children and friends. Her Catholic faith saw her through many of life’s challenges with a smile. She was a devout Catholic and her faith drove all her actions. She was always available with a word of encouragement or advice. She was the glue that kept this large family together after the passing of her husband.
She devoted much time and effort to her favorite charities, these included: Ky Right to Life, Food for the Poor, water wells, 40 days for Life, sidewalk counselor, numerous Christian missions, and many more. She was a member of both St. Martin of Tours and St Margaret Mary at her passing.
She did like to have fun as well. She especially enjoyed taking turns traveling around the country and world with her children. Providing them with lasting memories of their wonderful mother.
A Mass of Christian Burial will be held at 10:00 am Friday at Saint Martin of Tours, 639 S. Shelby St., with burial to follow at Cave Hill Cemetery. Visitation will be held 5-8 pm Thursday at the Arch L. Heady & Son Westport Village Funeral Home, 7410 Westport Road. Contributions to any of the above charities would be welcome.
