Carol was born in Vandergrift, PA on August 18, 1928 to Kostas Miniotis and Despina (Dompanakis) Miniotis. She had one sibling, her beloved sister Anna Miniotis. She graduated from Vandergrift High School in 1946, and married Hercules S. Barbour on August 22, 1948. Herky knew she was “The One” when he saw her dancing at a wedding. They were married nearly 54 years and had 2 children, Steve and Diane. Carol worked side by side with her husband in his businesses: The Silver Moon Restaurant, Herky’s Fine Foods, and Allstate Caulking Supply.
Carol dearly loved her family, her church, her friends and neighbors. She was proud of her children, grandchildren, and great grandchildren. Carol will be remembered for her smile. She often said “You have to laugh a little. There are too many things to cry about.” She took pride in keeping her house orderly and shining and loved baking Greek cookies, each meticulously shaped by hand. Carol and her husband enjoyed many road trips and loved visiting national parks.
Carol’s faith gave her strength to get through the tragedies in her life. She was a longtime member of the Annunciation Greek Orthodox Cathedral where she taught Sunday school, was a member of the Philoptochos Society, and the Daughters of Penelope. She helped bake and serve pastries at the Greek Festival for decades.
