Betty was born July 4, 1927, in Sidney, Nebraska, to Ernest William Milton Augenstein and Mina Edith (Peter) Augenstein, who preceded her in death. She graduated from Sidney High School in 1945 and went on to earn her Bachelor's Degree at Kearney State Teachers College in Kearney, Nebraska. Upon accepting a teaching position, she moved to Ordway, CO where she met the love of her life, William Gideon Knight. They were married June 14, 1953 in Sidney, Nebraska. This union produced two children who survived, a son, William James Knight of Houston, Texas; a daughter, Mary Kae Jarvis and a son-in-law James Adams Jarvis Jr, of Colorado Springs, Colorado. She is also survived by two granddaughters Virginia Jarvis of Colorado Springs and Amber Jarvis of Phoenix, Arizona; and several nieces and nephews. She was preceded in death by her husband Bill, sisters Thelma Hutchison and Marye Augenstein, and brother Dewey Augenstein.
Betty was a Life Member of Centennial Chapter No. 58, Order of the Eastern Star, having been initiated in Providence Chapter No. 108, Sidney, Nebraska, January 13, 1951. She was also a member of Sunnyside Christian Church.
Betty enjoyed the time spent with family, sewing, crocheting, doll making, and creating wedding cakes. She also enjoyed playing cards. In her later years she spent most of her time doing adult coloring and jigsaw puzzles.
Betty will be laid to rest next to her husband at Memorial Gardens Cemetery during a semi-private family service. A "Celebration of Life" is scheduled for July 4, 2023, on what would have been Betty's 96th Birthday.
The family ask that in lieu of flowers, donations be made in Betty's name to Solarice Hospice or Centennial Chapter No. 58, OES.
