Libby was surrounded by her loving husband, Joey, their son, Dominic, and Libby’s parents, William and Suzanne Wilson.
Libby was born in Canon City, Colorado. She and her younger brother, Billy, were the fourth generation of Wilsons to be raised in the town. She graduated from Canon City High School in 1993. Libby thrived playing varsity tennis and volleyball. Singing in Mr. A’s renowned show choir was a privilege that she always cherished.
She lived briefly in Arizona, where she began her career in hospitality at the Phoenician Resort. She moved to Denver in 2001 to work at the Westin Hotel, where she met Joey Profeta, who was the Executive Chef of the Palm Restaurant at the time. Libby and Joey married in 2003.
Libby and Joey moved to Charlotte in 2005 where they quickly built a community of friends, that they would come to consider as family. They received the biggest blessing of their lives in January of 2009 with the birth of Dominic, whom Libby loved with all her heart.
Libby was diagnosed with brain cancer in 2011. She immediately told the doctors to “get this show on the road, because I have a baby at home that needs me.” She never complained about the diagnosis or the years of treatment she endured. Those closest to her would marvel at how beautifully she lived with the disease. Libby will be remembered for her deep love of her Denver Broncos and could be found on any given Sunday shouting at the screen while staying busy knitting beautiful blankets for the local children’s hospital.
Libby was defined by her relationships. She remained close to her friends and family via phone calls and texts. There was not a day where she didn’t talk to her mom several times. Despite the miles between mother and daughter, it was as though they lived next door to each other. There is an entire community, from Canon City to Denver to Phoenix to Charlotte, who consider Libby “their girl.” Their outpouring of support during her cancer battle, particularly the past few months, is overwhelming and tremendously appreciated.
Libby is survived by husband Joey, son Dominic, parents William and Suzanne (Centennial, Colorado), brother Billy, sister in-law Katie, nephew Haven, and niece Callie (Denver, Colorado).
A visitation for Libby will be held Thursday, February 16, 2023 from 6:30 PM to 8:30 PM at McEwen Funeral Service-Pineville Chapel, 10500 Park Road, Charlotte, NC 28210. A Mass of Christian Burial will occur Friday, February 17, 2023 at 11:00 AM at St. Matthew Catholic Church, 8015 Ballantyne Commons Parkway, Charlotte, NC 28277. Family and friends are invited afterwards to Mama Ricotta's Restaurant, 601 S. Kings Dr., Charlotte, NC 28204.
