Carol was born February 6, 1946, in Adairsville, GA to Carl and Pauline Jackson. As a young girl, her family moved to the central Florida area. Carol made Apopka her lifelong home. After graduating from Evans High School, Carol worked for Central Florida School Supply for many years before becoming an office manager at PEC.
Carol became a devoted mother to her only daughter, Teresa, born in 1967. She and Teresa spent many years making precious memories. Carol and Teresa share a bond that can never be broken, even throughout life’s challenges. Carol’s legacy will live on within Teresa’s heart and soul.
Carol met her husband Tom in 1981 and they married in September of 1983, giving them 43 wonderful years together. During those years Carol and Tom were natural caregivers, caring for many close friends and family members. Carol devoted her later adult life to caring for others, especially her beloved family. In addition, she was a proud volunteer for Hospice of the Comforter for 25 years. Carol was a highly active member of Trinity Baptist Church in Apopka where she was involved with many different ministries over the years. One of her favorites was sponsoring those who were called to be baptized, mentoring, and witnessing to someone to give their life to Jesus brought her such joy as she was a dedicated Christian woman who loved Jesus! She loved her church family very much and each member was important to her.
When she was not doing for others, you could find her gardening or enjoying an afternoon with her family, especially her grandchildren, gathering to swim in the pool, just do not get her hair wet! You could also find her getting into a go-cart with the grandkids or fishing with Tom, even though she wouldn’t let him cook them in the house or eat them when they were ready.
She was known as “Ma” by her grandchildren and great-grandchildren whom she loved so dearly and cherished the time spent with them during holidays, family reunions, and all the various activities over the years. As the grandchildren became adults and started careers and families, she was immeasurably proud of all their successes. As the latest generation of great-grandchildren came along, they too, brought her an abundance of pride and joy. In addition to enjoying her family, Carol was an avid bowler and bowled in several different leagues over the years. She made lifelong friends with so many of her bowling buddies. Carol was also an animal lover and cared for many strays throughout the years but for the last 15 years she was devoted to her two cats Boots and Rainbow. They brought her a lot of happiness and were loyal companions. Most recently she was fascinated by watching the beautiful hummingbirds as they came to partake from the flowering shrubs and the feeders, she had for them in her front yard.
Carol is survived by her loving and dedicated husband, Tom, her loving daughter Teresa A. Jenkins, loving brother, Carl A. Jackson, loving sisters, Kathy Azalee Richardson, Loretta Edge and Sharon Jackson, five beloved grandchildren, Christopher Boudreau (Juliana), Nichloas Boudreau, Michael Boudreau (Lindsey), Philip Boudreau (Tory), and Hannah Trubenbach, ten beloved great-grandchildren, Logan, Lana, Evelyn, Riley, Kennedy, Maverick, Blake, Grace Lyn, Brody, and Leilani, as well as many beloved nieces and nephews.
Carol was predeceased by her parents, Carl B. Jackson and Lilly Pauline Jackson, brother, Richard Lamar Jackson.
In lieu of flowers she requested that donations be made to The Trinity Baptist Church Disaster Relief Fund.
