Heat oven to 425°
Crust:
2 cups of flour
1 cup of Crisco shortening
1 teaspoon of salt
Mix dry ingredients, then cut in Crisco with a pastry cutter.
Add 4-6 tablespoons of ice cold water and gently mix.
Roll out ½ of the dough on floured surface - re-flouring
as needed.
Put in 9 inch pie pan.
Roll out the other ½ of the dough – fold in half. Add filling.
Put 2nd pie crust on top, and pinch the edges and flute.
Filling:
3 cups of blueberries
1 cup of sugar
1 tablespoon of lemon juice
2 tablespoons of flour
Mix together. Put in pie pan and cover with 2nd crust.
Bake at 425° for 15 minutes.
And then 375° for 45 minutes.
Check - May need to bake a few more minutes.
