Carol was born on March 6, 1934 to Robert and Martha Fox in St. Louis, Missouri.
Upon graduating from the Mississippi State College for Women with a degree in Mathematics and a minor in Library Science, she worked for McDonnell Douglas, crunching data, and later became a teacher - teaching math and being a school librarian. She touched many lives while working at Jackson Middle School in East Orlando, before retiring in 1996.
She was married to Starr Parker, II, and they had 3 children, Starr III, Martha and Robert. Carol loved each of her children dearly and had a special, different and meaningful relationship with each of them.
Carol will be remembered for being intelligent and achieving things, while simultaneously being very loving and supportive of everyone she knew. While working as a middle school librarian, and as the internet was emerging, she received a masters' degree from UCF in Instructional Technology, which helped her "step up her game". She loved Jeopardy (which she was good at and now some of her grandchildren share that love). Carol also loved doing crossword puzzles and participating actively in her church life. She was bright-eyed, and that rubbed off on others with whom she interfaced/worked with/loved. Her family frequently hears from others how she touched and affected their lives and other people's lives.
Predeceased by: her parents, Robert and Martha Fox and her sister and brother-in-law, Marjorie and Oren Segrest.
Survived by: her brother and sister-in-law, Peter H. Fox and Debi Fox; her son and daughter-in-law, Starr Parker, III and Cynthia Parker; her daughter and son-in-law, Martha O'Connell and Joe O'Connell; her son, Robert Parker; and her grandchildren, Nicole O'Connell Kelly, Noelle Parker Pierce, Jason O'Connell, Dylan Parker and great grandson, Watson O'Connell.
Family and friends are invited to attend her services at Christ the King Episcopal Church at 11:00 AM on Thursday, March 24, 2022.
In lieu of flowers, Carol has requested that donations be made to the American Diabetes Association or the American Cancer Society.
