Elaine Marie Simmons, 63, of Homosassa, FL, passed away on Monday, August 21, 2023 at her home. A native of Pinellas Park, FL, she was born July 29, 1960 to LeRoy A. and JoAnn (McDonald) Pringle, as one of four children.
Elaine moved to Homosassa in 1977 and attended Crystal River High like her siblings, husband, and later, 4 children. A homemaker most of her life, she also worked in the administration, clerical, and retail sales fields, and gave back to her community as a Girl Scout Leader and seamstress for the CRHS Chorus and Show Choir.
Elaine loved sewing, cooking (especially baking), and spending time with her family and friends. She altered her own wedding gown to suit her taste before she and her husband, Ron, were married and later made wedding gowns for both of her daughters. She made countless costumes and formal dresses for family and friends over the years.
Elaine loved to bake desserts for holidays and special occasions. She kept several long time family dessert recipes alive by learning and perfecting them, then teaching them to her kids and grandkids.
Elaine loved spending time with friends on motorcycle vacations to the mountains, "girls only" beach trips, and weekends at Disney with the grandkids. Elaine especially loved spending time with her nine grandkids, spoiling them rotten with gifts on birthdays and holidays.
Elaine's perfect day would be in the north Georgia mountains riding on the Harley down the long, twisting roads, followed by quality time with friends in a beautiful cabin rental enjoying a meal and planning the next day's ride.
Elaine was preceded in death by: her father, LeRoy A. Pringle, and her brother, Jeff Pringle.
She is survived by her loving husband of 42 years: Ron Simmons of Homosassa; her 4 children: Nikki (and Greg) Chilson, Homosassa; Kim Apicello, Seneca, SC; Ben Simmons, Homosassa; and Jon Simmons, Norfolk, VA; grandchildren: Blake, Sydney, Collin, Addysen, Mylie, Ember and Aurora Apicello; and Alex and Lily Chilson; her mother: JoAnn Procious, Homosassa; her siblings: Ralph Pringle, Crystal River; and Laura Jay, Melbourne, FL; many nieces, nephews, and honorary children, as well as her beloved fur baby, Lacey.
The family would like to extend a special thank you to the Vitas Healthcare Continuous Care Hospice Staff for keeping Elaine happy and comfortable during her time at home.
