She graduated from Carlock High School in 1948. She enjoyed being in 4H. This gave her a love for cooking and sewing. In college she set out to become a Home Economics teacher. In 1952 she graduated with a Bachelor of Science in Education from Illinois State University. Right out of college she got to establish a brand-new Home Economics department at Hanover High School.
On June 4th ,1955, she married Herbert Snook at Grace Evangelical United Brethren Church in Bloomington Illinois with 500 guests in attendance at the candle-lit ceremony. She also worked for State Farm Insurance Company for almost four years. Ethel and Herb moved to Portland Oregon in the summer of 1959 when Herb got a teaching position with Portland Public Schools. They loved to travel and went from coast to coast looking at different historical sites. Later she enjoyed being a stay-at-home mother for their two daughters and using her Home Economics skills.
They began attending Lynch Baptist Church where she discovered a passion for missionary ministry. When asked to write up “Missionary Moments” for the church bulletin she willingly took this on for 25 years! She enjoyed playing the piano for the church when needed and also sang in the choir.
On June 1st, 2013, Ethel and Herb moved to Cornell Estates on the Retirement side with their first day being the annual Parent Brunch. On June 4th, 2015, Ethel and Herb celebrated their 60th Wedding Anniversary. The love of her life passed away April 6th, 2017. Cornell Estates was her home for over 7 years.
