Pat Carson, 75, of Cedar Park, TX passed away peacefully Tuesday June 4th. She was born July 3, 1942 in Ft. Worth to the late Mary (Kincl) and George Vitek. She was a lifelong resident of Fort Worth until 2005 when she moved to Cedar Park to be close to family.
Pat was a graduate of Poly High School where she met and later married Don Carson. They were married 40 years before his passing in 2001. During their time together they shared many adventures of travel and special times with family and friends. They had one daughter, Shannon. After working for National Farm Life Insurance Company for 28 years, Pat retired and was the most loving and dedicated Grandmother to her 3 granddaughters, spoiling them rotten with endless time and attention. Pat spent many years caring for others during times of need and illness. She always gave all to those around her and blessed all that she cared for.
She was an exquisite chef and made the most amazing meals, always trying new recipes or perfecting a dish until just right. Sunday dinner was a tradition that blessed all every week at 1:00. If you had a chance to be at the table and enjoy her meal, you were very lucky. Her fried chicken was legendary! She was the queen of Thanksgiving and treated family and friends to a meal like no other, spoiling us with fabulous food, pies we dreamed of and a table setting that was always perfect. Pat also took great pride in carrying on her Czech roots, making kolaches for those she loved. There were none better and a highlight was winning the Grand Champion award for her kolaches at Westfest in 1997.
Her favorite place to be was Highway 30A in Blue Mountain Beach Florida where she vacationed every year with family. She loved road trips through the back roads, estate sales, gardening, eating out, and was always up for any adventure. Her smile lit up the room and her blue eyes were stunning. She will be missed by all who knew and loved her. We will strive to bake her kolaches, cook with her recipes, go to FL and smile and carry on to live our best lives to honor her.
She is survived by her daughter Shannon (Carson) & John McDaniel; granddaughters Carmyn, Ryanne and Avery McDaniel of Leander, TX; Brother, Dr. George L Vitek; Nieces and nephews, Melissa, CP, Daniel and Michelle Sterns, Sara and Anthony Rather, Charlee and Grace Buhr. Cousins Jackie Lankton, Hali and Ryan Wonola; Vicki, George and Sasha Korda. She is also survived by MANY special cousins and their families.
Visitation will take place Sunday, June 10, from 5-7 pm at Shannon Rose Hill with funeral service on Monday, June 11 at 10:30 am.
