Ellen Ann Doubet departed this life on October 6, 2024 surrounded by loved ones just as she wanted. She was born in Connersville, Indiana on May 13, 1939 and lived a life dedicated to caring for others with compassion, warmth, and a deep sense of empathy. Ellen enjoyed growing up with her family in Connersville, parents Louis J. Heeb, Sr and Mary Louise Moffett Heeb along with her younger brother Joe. She attended St. Gabriel Catholic School until 1953 and graduated from Connersville High School in 1957. Ellen went on to receive a Bachelor of Science in Nursing from Indiana University in 1961. After graduating from college she set out on a new adventure and moved to Anaheim, California where she established the start of her life in Orange County. She met and married James Michael Doubet in 1965 and became a mom to two children. Being a loving, caring, devoted mom was her most rewarding job.
For over 20 years, Ellen served as a school nurse with the Irvine Unified School District where she was a comforting presence for students, parents and staff alike. She was known for her calm demeanor, gentle care and tireless commitment to the health and well being of every child who entered her office. During this time she received her masters degree in public health from Loma Linda University to continue her growth in the nursing field.
After becoming a widow at a young age, she started a life with her soul mate and life long companion, Donald Olson. They created a happy life together filled with many adventures like traveling to their favorite places, fishing, dining out, visiting casinos, watching their favorite sports teams, going to Borrego Springs and becoming proud devoted grandparents to their two grandsons, Ben and Ryan.
She is survived by her loving companion, Don Olson, her son, Michael Doubet, her daughter, Suzanne Watson (and her husband, Scott), her grandsons, Ben Doubet and Ryan Watson, her first cousin, Farrell Smith, cousin, David Devor, and numerous devoted family and friends who will miss her dearly.
Her legacy of care, compassion, kindness, unconditional love, sacrifice and dedication will be remembered by all who were fortunate enough to know her.
A rosary service will be held on Friday, October 18, 2024 from 4pm-8pm at Pacific View Memorial Park in Corona Del Mar. A Catholic Funeral Mass will be held on Saturday, October 19, 2024 at 10 am at Saint Cecilia Catholic Church in Tustin. Burial will immediately follow at Pacific View Memorial Park in Corona Del Mar.
